Dilutions of Grandeur is Mike and Emma Walsh‑Mc Nicholas. We believe in old-world hospitality: looking after every guest, making a moment of every drink, and hosting the whole night, not just running a bar.
Twice national champion mixologist, with about ten years in the bar industry, including head mixologist roles.
Mike makes the drinks. He has travelled internationally to study mixology and attend global conferences, and he designs every drink and the systems behind them: the pre-batch systems, the house-made syrups, cordials and super juices, and the staff training.
His rule: if a concept doesn’t show up in the glass, it doesn’t belong in the drink.
Event manager and host. Emma looks after hosting and business development, and on the night you’ll find her behind the bar alongside Mike.
From the first enquiry to the last round, she makes sure everything runs smoothly and every guest feels looked after.
